Locals in Hainan do not call it as Wenchang chicken rice if the chicken was not raised and breed in a different place. Unlike Singapore, they call it as Hainanese chicken rice, even though the chicken came from the USA, Brazil and other countries.
3. Way It Cooked
The way it cooked is the same except for the cooling process. In Singapore, they soaked the poached chicken in ice water. While in Hainan, they can air-cooled the poached chicken.
4. Method of Serving
In Hainan, they serve it the way it is, large thick pieces with skin and bones intact. But in Singapore, they serve it differently. In City Square, they serve chicken rice in two ways, debone or bones intact. Others recommended skinless too for a healthier option.
5. With or Without Dressing Sauce
Also in Hainan, they never serve Wenchang chicken rice with dressing sauce. They prefer eating it without light soy sauce, sesame oil, oyster sauce, very unlike in Singapore.
